I've gotta match on tuesday against Tau and need some pointers. We figure, my friend and me, on playing a 2,000-3,000pt game. My biggest issue has been a swarm of outflanking kroot and hounds. The next issue has been 6 or so heavy battlesuits (the kind of the rail guns on the backpack) taking turns killing my tanks, inf etc. I could also use some help taking down the misc crisis suits and his hammerhead, He used to use three but he swapped them out for crisis suits. He also fields two piranhas and about 2 units of 6 or so firewarriors. Any help would be awesome!

So you have problems with:
Kroot + Hounds..
Battlesuits..
Broadsides..
And hammerheads..
So you have problems with his whole army or what..?
Now:
Kroots they break easily and have a terrible save.. If you don't feel you can handle shooting enough of them, use a psyker battle squad on them, make them run off the board..
Battlesuits.. Does he ninja them on the board or how does he do it..? If he deep strikes them, then the only defence you have is target redundancy, simply give him too many targets.. Then give him with the old missile launcher.. That will take them, out pretty easy.. You could also make a screen of men, so that he can't get close to your important stuff to use those fusion guns..
Broadsides: Demo charges.. SWS or Marbo.. Instant gib no armor save.. Marbo deploys like he always does.. SWS needs a outflanking/scout moving valk to get near them..
Hammerheads.. AV 13.. Lascannon/Missile launchers will take them out.. But if you really wanna hurt them use melta vets in valks to get within their pesky shield..
In general don't bring point sinks like upgraded tanks.. Bring alot of stuff.. Target redundancy is very important against a Tau opponent, he dosn't have the guns to shoot all your stuff at 3000 points.. 3 broadsides in a squad can still only focus 1 tank.. And he only has 3 Heavy slots.. So you will max see 3 x 3 squads of broadsides and if you see this then he won't have any hammerheads..
Get alot of chimeras with close range guns in them.. Try and get as close as possible to him so he can't play with the 72" range on the railguns.. Dont keep a part of your army in reserve.. that will only make his work of shooting you up easier..

The tau have access to target lock which allow them to target separately within a unit, so the broadsides can take down 6 tanks a turn. Instead of going mech IG like he is expecting to face and porepare for, go infantry blobs of both PW and firelines, like 30 man blob of PW delivery, and 20 man of GL and AC or ML, both with commissars. Marbo and psyker battle squad is a good idea like previously mentioned. cheap russ with battle cannon can be a pest as they instant kill suits. Do not charge the piranha if they are equipped with flechette dischargers, take them out with AC instead. Chimera spam is a bad idea as its a easy kill with their ap1 railguns.

Use flamers to burn kroot out of cover, or, if in the open...MORTAR THEM! Engage his armour with MLs and LCs, these can hammer battlesuits aswell, and the MLs can take on firewarriors and Kroot too. I advise ratlings to pick off and possibly pin battlesuits, and in a big game, you can easily afford the points for a squad of 5.

Go down a flank, then run down the length of the board smashing up his stuff. THat way his range advantage will be nerfed and youll be getting over saves/hull dowwns from all his stupid fish-faced warriors etc that are in the way of his firing lines.
Tau like hellhounds etc too, if you have them use them.
Infantry blobs in combat are fun too.

Okay, that sounds good to me. I think I got a mobile enough list to still pose a threat to his movement. My friends problem has always been to spam tanks and battlesuits but leave his infantry sitting around, or understrength. Ive been able to knock out all his infantry and win games like seize the objective etc.

against tau your best best general tactic is to get right up his nose dont let him take advantage of his huge ranges, so obviously, mounting them in a chimera/valk is a good bet, throw in some flamers too
kroot are nigh on impossible to dig out of cover if they are taking cover behind trees, their 3+ cover save will deny mostly anything, so flame them, i have never encountered kroot hounds before so your guess is as good as mine, but as said denying him use of his range will screw said tau player over backwards, especially if you use a "refused flank" (i think thats what its called) type deployment, laugh in his face as a huge amount of sledgehammer flies into his side then sweep up the flank! oh and watch out for the fusion blasters!
