Basically I've sold off all my tanks for a couple Valkyries, how many flyers do i need to be a proper airborne regiment?
PS : Any tips from pro airborne gamers in general concerning airborne regiments?

You'll generally want anywhere between 3 and 6 Valks, depending on points and setup. I try to run my Valks in wing pairs; it seems to be a nice middle ground between numbers and survivability.
As for tips on running airborne, RT and I are among the local experts on the subject, and RT actually started up a thread a while back in the Tactics section called, "Operation: Rolling Thunder" that's become an airborne tactics forum. It's been stickied, so you shouldn't have to look very far to find it.

my advice would be to make sure their are enough chutes for all your boys but seriously, i think the answer has been very nicley covered by the good Julian Sharpes above i pray the emporer gives mercy to the fools who fight you, cuz valks certainly dont! Who love to party the most? AIRBORNE! who do the ladies love the most? AIRBORNE! Who do Chaos Fear the most?! AIRBORNE! and Khorne....

What do you want to know, I guess? My suggestions would be to use at least 4 flyers, have vendettas bust tanks and MEQs, Valks bust hordes with their MRPs. Remember you can move 24 inches with flat out due to being a fast skimmer, and you get a 4+ save for doing so. Read up on embarking and disembarking rules, know them, love them. If you get the second turn, outflank, if you go first, use RT's Rolling Thunder. Use vets over regular troops, give them carapace and lots of SW. Get an Astropath for better outflank and reserve rolls. As a general rule, don't deepstike your flyers, its pretty risky business. Other than that, just pound them mercilessly from the skies. Do what air cav does.

Regarding the tips, I read in another forum that the vulture best use was it's 4 MRP's version with original HB and still use them all when moving at cruise speed (12"), because of the force 4 of the MRP's and by moving so it will get a 4+ save.
I can't find original post and went through rules and special equipment list I don't find where this 4+ save come from when fast skimmer are moving up to 12".
Can someone deny this 4+ or have any idea what rule is applied?

No, a Vulture (or any other fast skimmer) only gets the 4+ cover save when it moves more than 12", which unfortunately prevents it from firing any weapons at all.

True, always wanted to have an A10 in my army. As for the MRP's, an other newb question: You need to role to hit with this weapon, right? It's not considered template or artillery, meaning with the 4 MRP on the vulture, an average of two will fire a turn?

Nopey. You never roll to hit with blast weapons under the 5th edition rules, but you do roll to scatter (2d6 - shooter's BS"). All four will fire, and will most likely wound something.
