Does anyone ever use them? Seems like a big gamble for a one shot weapon that only has a 50% chance of even hitting its target, much less doing any actual damage.

I used to use them, back when I ran scout sentinels a lot. They are pretty good on sentinels, gives them an extra shot at side or rear armour when they outflank. Sentinels usually die pretty quickly too, so spending the points on the alpha strike can be good.
For general use though? They are not not really worth it. For those points I could get a proper weapon upgrade instead. I think that I would rather by a stubber, at least it can fire more than once.

Even though they aren't really that good, I love to model them on available upgrades for vehicles, for the sake in appoclypse where you need all the pts for a 10k per side mega game..not that i had one, but i can dream!

Hunter-Killers are only worth it if you can take a bunch of them, for a hard first-Turn strike.
They're less commonly useful than they were in 5th, because the fully meched up Armies that kind of strike is best against are less common, but the improved effectiveness of Krak Missiles against many Vehicles and the opportunity to score First Blood makes them even better when the situation does come up, as does the prohibition on Full Reserves.
It can also be a solid blow to your Opponent's Mobility right off the bat, making it much harder for him to get up to your Backfield Objectives and/or score Linebreaker.
Think about it like this, as a rough comparison: For 60 Points, you can either pick up an Infantry Squad with a Missile Launcher, that will average 6 Missile Shots per Game, or you can grab H-Ks for 6 Vehicles, and get 6 Krak Missile Shots all on Turn 1 (Or when you need them, sometimes it is better to wait a bit).
There are advantages and disadvantages to both, and if you are going to be using them you usually want to be building the Army with that Alpha Strike in mind. Tossing one or two in randomly? You can probably do something better with those Points.

Just curious, this kind of sounds like a stupid question, but can a vehicle only take one hunter killer missile, or can they take more then one?

They are good if you get a " weapon destroyed " gives it that much more life... but even still, the sentinel will probably die anyway lol

I run two on my Tauros Venator. So far they have proved very useful for the points cost. More so on a fast attack vehicle thank can get in side armor shots. The Tauros vehicles are by far the best bang for your buck vehicle out there atm in terms of fire power, movability and points cost.

I like them on Al'Raheem and his squad if they are meched up. But yet again, a way to get missiles into rear or side armor which I think it the main use for the HK missile.
