I'm with Vladimir on the melta bombs. Those are an absolute last resort, because even if you catch the damn thing before it barfs out a load of Terminators, whatever guys don't get nuked in the ensuing explosion will be chewed to pieces by the passengers. And Vets are too useful and expensive to just throw away like that. Stick with meltas, lascannons, maybe a Basilisk if you've got one. If your in melta/demo range, it's a safe bet you'll get into combat, so why not take it out, the terminators are going to get you next turn anyway, so why not blow up their tank....

why bother having meltas and a demo charge then? save the melta bombs for the unit inside?

I havn't had a chance to destroy a vehicle with them yet but I find they are amazing for shanking monstrous creatures. I imagine theyd be good for drop pods and dreadnaughts also. The damage theyd cause a LR would be nice if you could pull it off.
A guard assault vehicle would be helpful also though (as far as I know there is no way to assault from a vehicle with the guard?) cause unless you're hoofing it, you'd have to hop out of the chimera and take it in the face for a turn I think.

Vegna, you can't use melta bombs on infantry, only on vehicles and MCs.

Because by the time you can get Demo Vets in position to Charge a Land Raider, it's already done its job. If you're walking them forward, you're not Charging until it's on your side of the field. If you're moving up in a Chimera, you need to advance, disembark, and then sit around getting shot up for a Turn before you can Charge it. A Vendetta has to show up from Reserves, and then still has the same problem. Once it's dropped off the Assault Terminators/Death Company/Berzerkers/whatever, your Opponent usually doesn't really care what happens to the Land Raider.

then screw them just use the meltas and try to escape the horrors from inside! Also if your using meltas and do take out the LR cant you then shoot at the unit that's been forced out? and by that i mean by another unit not the vets.

I have found the manitcore or Demo Tank combo works great a killing land raiders.
Ordnance weapons with there 2d6 on Armour penetration but you have to pick the highest, make it easy to get that magic number of 14
