I'm asking advice as to how I have my current army list set up.
Currently its:
HQ squad mounted in Chimera ( 6 men, including commissar)
3 squads of Death Korps Grenadiers mounted in Chimeras, 2 designed for close quarters engagement with flamers and meltas, the other for fire support with a plasma rifle and grenade launcher. (though I may change it to 2 grenade launchers if thay have to move...) Chimeras are outfitted as being 1 w/ heavy flamer turret and heavy bolter, 1 w/ autocannon turret and heavy flamer hull, 1 w/ Autocannon and heavybolter hull.
The only other things are a Demolisher with lascannon and plasma cannon sponsons for close qaurters support work, and a Leman Russ with ranged fire support.
My doctrines at present are Grenadiers, Stormtroopers Squads, Mechanized, Carapace Armour and Chem-inhalers.
this comes out to 1500 points even and I wasn't certain if I had enough infantry to field an Effective Guard army....
Open possibilties I have currently are another squad of Stormtroopers as Elites , and a second Leman Russ... and even possibly my Iron Warriors basilisk, ha. I dont want to have to buy more but I am open to suggestions as to what to look into to increase it to 2000 points since I know a lot of people play those... I am tailored to 1500 mostly because a store near here did those games, but it went out of business a while back so... im out of luck haha

I find it hard to field a lot of models with the Mechinized doctrine.
However, I have noticed that you don't seem to have any Command squad for your infantry.....is this a legal list?

Grenadiers don't need a command squad as they're the same as Storm Troopers just without infiltrate/deep striking

Why thanks... I'm actually adding some in to make it a 2000 pointer... 2 squads of Stormies as elites to Infiltrate ( one has a Commissar in it! ooo ) and a second Battle Tank... all in all I'll have 3 Ordnance weapons, 2 with NICE range to even the odds on numbers... plus my demolisher does have plasma cannons which are also blast templates.... so I think I can cut down enemy numbers to managable yeild

grenadiers and stormtroopers aren't helped by doctrines unfortunately which kinda makes that suck I might recommend looking at the armored company list and taking doctrines for your vehicles instead. I think this is the first time I've recommended someone to check out armored companies but this is how I view an armored company should be set up personally. I know you can take a doctrine in the armored company list that'll give your vehicles +1 side armor, which is really really nice for chimerae. there's other stuff like sharpshooters for vehicles which is pretty nice but you've got a good few flamers and plasma cannons and stuff that wouldn't benefit by sharpshooters that it might not do too well. you'd have to look and see what you could find that you liked but it might very well be more useful for ya

Well... the carapace armor would only be used on his command squad, which would make them fit in with the heavy armor feel of the army. Iron Discipline lets the commander's leadership stronger on any unit using his, so storm troopers benefit from that. Granadiers, mechanized, and storm trooper squads are all pretty vital to the feel of the army. So In my opinion the doctrines are all set for this army.
Cool idea with using armored company doctrines though. There are some interesting ones available.

Armoured Company would sky-rocket my points, and I would only have so many vehicles. My Infantry would drop to 30 stormtroopers as elites in Chimeras, and besides that the only tanks I have are 2 Leman Russes, a Demolisher, and my old school Exterminator... and that doesn't seem like enough tanks for an Armoured Company really

yeah the idea wasn't to change your list, just change what the doctrines effect (vehicles vs infantry). colonel mcarthur made some real valid points though in that you're using your infantry doctrine pts. pretty well in your initial list - perhaps I offered a not-so-great thought

have you taken iron discipline? ignoring -1 for under half strength is really helpful.
