I had the opportunity to make a pilgrimage to Warhammer World. Because I live in the states and it will be a very long time before I will have the chance to return... My wife was gracious enough to buy me the Hammer of Cadia tank set.
Now the daunting task of making decisions. What tanks do I make? 1 baneblade kit 3 hellhound kits 3 Leman Russ kits (non demolisher)
I already own 2 Leman Russ kits magnetized for all weapons and sponsons, and I don't want to deal with that again, so I want to make sound decisions and glue it together.
I own 0 hellhounds and this is my first baneblade.
Which variants should I build? I like to play Cadian fluffy lists.

Hellhounds! Orks are coming out soon and you will need those torrents to burn them inside their trucks.

Hellhounds are good all-around fast tanks, but I suggest you dry-fit the turret first, so you can see how the main gun is mounted. It's possible that, like with the new Russ kit and the Battle Cannon/Vanquisher Cannon setup, that the three cannons will be more or less interchangeable.
That said, if you're looking for advice on which variants to build because you plan to play with them, I suggest you look at your local metagame and build accordingly. In the IGMB Tactica Imperialis thread up in the IG General section, I've written up a review of the multiple flavors of Russ for people with exactly your problem.
tl:dr, If you're fighting Space Marines, take Russes and Demolishers. If you're fighting Eldar or Dark Eldar, why are you taking Russes? If you're fighting Guard, Tau, Orks, or Necron or Tyranid horde lists, take Eradicators. If you're fighting tanks, take Vanquishers. If you're fighting against tons of transports, take Exterminators. If you're fighting Terminators, take Executioners. About the only variant to skip is the Punisher, unless you plan to mount Pask in it to go squad leader and special/heavy weapon sniping.
No advice on the Baneblade, as I prefer to avoid super-heavies where possible.
