Hello,
Which is your favorite AT assets for your list? I know, most it depends on how your friends go Heavy Tank... I usually play 2000 pt against Tyr (no tank but a lot of MC), Chaos (who often run more Dread and walkers than human body) and Eldar/Wolves (lot of Vehicles here too)
Actually my assets consist in:
One lascannon for every Infantry squad of the main platoon (Three of them)
A squad of Missile Lunchers
Two Squads of vet with 3 Melta mounted in Chimeras
A Medusa With Breaching Shell
A Vendetta
A Russ Exterminator
And they seams to me always few Heavy Weapons though...
What do you have to stop enemy Tanks, or what do you use in your list? Which works well and which disappointed you every time?

I think lascannon hws are my favourite AT unit. 3 lascannons together that take a single order to get bonuses. It's true they are fragile but you can also hide them more easily. I'm not sure about constant disapointments but missile launcher hws fail me a lot and it hurts when a bassie or demolisher scatters and is wasted.

I've been meaning to try lascannon heavy weapons squads. I loved them back in the 2000 codex, but stopped using them when the 2003 codex made them more vulnerable. However, they are dirt cheap.
I've found the Tallarn 23rd's 3 favorite to kill enemy tanks are:
1.) 35-trooper platoons with 4 lascannons, various special weapons, priest or commissar, and a vox: I give them the the ignores cover or tankhunter order from my CCS or from Yarrick. Orders really improve this unit's ability to kill tanks.
2.) 3 veteran squads in chimeras with dozers, 3 meltaguns each: These suckers consistently zoom forward, kill tanks, and then die (but in so doing they serve as speed bumps that protect my line). I've been meaning to give these vets the demo charge and meltabomb upgrade and see how they do.
3.) stormtrooper command squad with 4 meltaguns in a valkyrie: it's a suicide unit but a fun one that usually gets the job done (I take them from the MT codex so I can get valks for 10 points cheaper and so I can twin-link the squad through orders
My meta (northern Virginia in the U.S.) tends to be a bit light on AV13 and AV14 tanks so I often use bazooka platoons rather than lascannon platoons because the Tallarn missile launcher trooper is one of my favorite models. The missile launchers are definitely inferior to the lascannons though.

Melta's and Lascannons are the most relied on AT in the entire dex. I actually prefer Vanquishers, and not just ones with Pask. Yes it's BS 3, butit's pretty easy to get Prescience either through a Primaris or allies, and like Meltas it consistently penetrates AV 14, useful for cracking open Land Raiders or Monoliths, which Lascannons have a hard time hurting. I usually run both Melta's and Vanquishers and Lascannons. Missile Launchers I don't like as much, usually my transport and light armor busters are my main AT or Autocannons. I just don't like them as in Krak mode they seem like a weaker lascannon or a one shot auto cannon.

I find you can't beat Pask as your warlord in a punisher with better bs, heavy bolt spons and storm bolt Pintle, re rolls of ones to hit and wound and rending on a 6 for the Gatling gun rearly fails to destroy what ever is in front of it. But an executioner with re rolls on the plas running with him will defiantly mop up what's left.
