I think the more mobile list 1 is probably best; the units won't suffer from mob rule penalties and the army can get to objectives as they need.

What size tables & what victory conditions are you expecting?

Table size is 4x4 and I'm guessing maelstrom.

My mistake looks like it'll be eternal war without purge the alien.

in which case take list 3 and attach your warboss to the big mob, the lucky stikk gives +1 WS and the painboy will give the unit FNP.

Just a quick recap. I ended up using list number 1. The speed of the trukks is just too good to pass up.
Game 1 was against my best friend running his Dark Angels. A librarian, 3x scout squads, a whirlwind and vindicator. Game ended with his conceit. Basically just had to catch up with the final scout squad. Only lost one boys squad. Game 2 was against another good friend of mine and his ad mech. A tech priest dominus and two squads of destroyers. One grav, one plasma. Game ended with me wiping him. Game 3 was against an old work buddy of mine with his elder. He has a autarch, 2 squads of 3 man jet bikes... A wraith knight. I conceited around turn 4. I got his warlord but the bikes just kept jumping away and the wraith knight stomped me off the board. Very disheartening.
Overall it was a fun night. Love the trukks.

Wraithknight in a 500 point list?
Glad to hear you had fun with your chosen list!

Unfortunately yes. It was a legal CAD.
It was not fun and very op. I wish GW balanced things better.
Oh well. Just have to learn to deal with them in the best way.

Wow, putting 3/5ths of your points into a single model isn't going to be much fun for your opponent.

No it wasn't. But it's apart of the game unfortunately. The elder player ended up wiping me and another guy but got wiped by the admech player...

The kataphron servitors are easy to kill but dish out a lot of pain, especially to heavy infantry. The grav ones practically auto-kill marines and the heavy grav cannons have longer range/ more shots than the normal grav cannons that sm centurions use, but I'm imagining they wouldn't have been good vs t-shirt saves.
