Okay, so I read most of the other posts about facing T'au and I get the gist; but my buddy is making a 2k Crisis Suit army and I have to admit I'm scared. So I would love for you professionals out there to give me some advice on what to field and how to win; cost isn't really a factor.

Lot's of template weapons that deny cover saves and outflankers.
Get the Crisis Suits in Combat and they crumple like tin foil.
Kill the Etherals is a last resort unless you have his troops tied up in combat first.

i normally just play dead then surrender lol
when i play tau the best tactic i used was outflanking with valkyries and sentinels

Run Flankers, especially a Banewolf with Creed. Invest in Plasma and maybe some Bassies with Camo if he bounces his suits. Hellhound or Banewolf Blitz can be fun, and remember that Tau CANNOT afford to play Bullet Tag with the IG. Use lots of HWs, large combined squads to spam lasgun shots, and maybe run Plasma or Melta Vets.

Hrmm, this all sounds good. I'm thinking dropping melta-vets in a Valkyrie on him while spamming with infantry and HW teams and throwing a Basilisk or two in. On another note, he's equiping most of his suits with Plasma and Missle-Pods, and getting some broadsides while using minimal infantry and some tanks, does this change the general outflanking tactic at all?

No, in fact it makes it easier on you as you don't have as much you need to worry for targets. Just make sure your suit killers show up in range of them and there's not much he can do to stop you. Plasma Rifle/Missile Pod is not a very good combo against Guard as it's expensive and doesn't have the firepower to do serious damage to troops.
