Here is my 2,000 point army list, reliying on lots of troops and loads of Mortars as well as two Master of ordnance and a Wyven.
I've used a Morta squad before and found it almost useless, but does having loads of them change this?
What do you guys think?

Woo Hoo MORTARS!!!!
I love mortars and field a lot of them when I play guard. (normally 15 of them)
I also like Master of Ordnance too. (normally 2)
I have found that single mortars aren't really worth it and invest purely in the heavy weapon squads, the multiple blast bombardment allows for far greater accuracy. I would suggest removing the mortars from the CCS's and the PCS's and putting them into more 3 mortar heavy weapon teams.
I prefer to keep my Command HQ bare bones or give them regimental standards to help with moral tests (the fact they are at the back doesn't matter as it allows me to re-roll the fleeing squad just before they run off the table)
I'm a little puzzled by the infantry squads with flamers and bolt pistols - I assume you mean ther sergeant has a bolt pistol while the special weapon slot is a flamer?
Your veteran units may struggle to get within melta range - I'd consider reducing the numbers of them to 3 squads and giving them all demolitions doctrine* so that they can use melta bombs and the demolition charge as well. That way each man in the squad has melta potential rather than just the special weapon slot(s).
*Does this doctrrine stille xist - I haven't got the new codex!
Your wyvern will be a priority target and is the only tank on the table so the enemy will use all of their anti-tank to destroy it first turn, consider taking an aegis line with quad gun and make all their anti-tank weaponry redundant.

Defiantly!! 15 seams to little lol. Think my list has 26!
Master of Ordance is a bargain, it also fits into my theme, as if more Mortars behind lines and such,
I think your right about squads of Mortas insead of single, but for 5pts and makes the army even more scary, I was thinking I may as well. Also, they might be worth being in the HQ's as they have the range to keep up with the masters of Ordance.
Yeah, bolt pistol for Sargents. It's on the model but I also view the Boltpistols as a light SMG and prefer the idia of the Sargent spraying bullets instead of his one shot las pistol.
Flamer idia is that I blast the enamy into having to charge me, then the flamer toasts the closing enamy. Cheap and dosnt need BS... That the guard lack a little.
Demolitions doctrine I think is a real good idea. But the Melta are incase a tank drives past, I don't think they will go off hunting. But the Meltagun is also good at melting Power armour and other things. And vets have the BS.
Wyvern priority target, another good point. I here it's the best Ordance tank... For the cost also. But the amount of Anti tank is a very good point. It could be swapped for a Morta squad?
Aegis line with quad ain't my style. Just don't like the idia of a army bringing it's wall with them.

okay - sounds like you are fitting more than 1 melta to each veteran unit?.. I would suggest the longer ranged plasma for veteran units, they're still mobile and cut through marine armour and medium vehicles, the big tanks will be tough though.
the wyvern is a great piece of wargear, but it will draw a lot of fire.
if you aren't keen on the aegis then it looks like missile launchers with flakk may be your next option.. or the forgeworld AA Sabre platforms which are better value in points
I like missile launchers so that's where I go for AA in my all infantry lists, these also help take on the big tanks.

It's just one Melta per vet squad ATM.
Missile launcher sounds like a plan? Possibly in the platoon commands and one each for the vets?

I'd make a dedicated heavy weapon squad or two, deploy them near your CCS so they can get the twin-linked order when they fire.
Beware that Missile launchers have a hard time against AV14 as they can only glance.
Your veteran can have up to 3 melta guns - GW (and ebay etc) sell sets of 5 metal melta guns if you need them.
Keep the melta mobile and avoid making heavy weapons snap fire.
