Basically, what units should be placed in a transport? Stormtroopers can deep strike and veterans are hardly close combat based. What about a squad of juvies with a priest?

Just because a unit isn't close combat based doesn't mean it won't benefit from a transport. In fact, the most common use of Vets is in Chimera's and Valks thanks to the speed and durability boost it gives them.

The thing about the IG is that they really have so much versatility, if you really want to take a CCB unit in a chimera though, may i suggest Ogryn's you can drop 6 of the nasty lumps from a chimera and into enemy lines were there bound to cause some trouble hope this helps Dave

Also, one other thing to consider, you can't assault after disembarking after the vehicle has moved.

Five fire points means that you can shoot all your fancy guns from a mobile platform.

I think it's more an expression concerning chimeras than an actual pillbox

A pillbox is a term for a small, low fortification, for example the ones used in WWII beach defenses -- a hardpoint with fireslits and a heavy weapon or two. The name comes from the appearance. 40K transports can double as these because the transported squad can hide in and fire from them, forcing your opponent to kill the transport before he can get to the juicy bodies inside.
