So what is the actual difference between quick shade and game workshop washes?
Apart from the method, one dipping and one painting. Is there any difference in the finished product?

Primarily - quick shade is a varnish, paint washes are paint. Visually I have seen a lot of peoples' dipped models. If you're someone who would otherwise simply paint base colours and stick them on the table, it's a good upgrade. It's also better than inappropriate uses of drybrushing everywhere. It doesn't however look anywhere near as good as a good wash.
The upside however is that the new GW washes are balls, and the washes AP make to match their quickshades are awesome. Best replacements for Devlan etc out there.

I would t recommend dipping. Paint it on will get better results IMHO.

Didn't/doesn't Yeti use quickshade on his Valhallans? They're quite stunning. It's too bad Yeti hasn't been around the forums lately...

If I recall he put a good amount of thought into the pigments and colour sympathies of all his paints and you can see that it gave him really good results. That was a lovely army.

If you're using it to keep up productivity with your gaming army, use it. Quoted for truth. Not all of us have a lot of free time to devote to our hobbies. I come home from work exhausted and my eyes are tired, it's hard to work up the focus, patience and attention to detail needed to paint like I used to (ten High Elves a week).
