Stupid question, I know, but where in the Codex does it state that Veterans can use a Valkyrie or Vendetta as a dedicated transport? I've never used either unit so can't find it.

They can't. You have to use a fast attack slot for your valkyrie and vendetta squadrons.

But can you start your Vets in a Vendetta? They fly in from reserve so I always assumed they did it as an off-table kind of thing. Is that game legal though?

Yes. You can start the Game in a non-Dedicated Transport, even if it's in Reserves. See Deploying Transport Vehicles on Pg. 121 and Preparing Reserves on Pg. 124.
Dedicated Transport provides no benefits, it's purely a restrictive Rule. And a fairly minor one, honestly: No other Unit can Deploy in that Transport. That's it.

Yeah but make sure to maginitze that bird as you assemble it. The module is surprisingly fragile and spacey so it wouldn't hurt to have detattcable wings.

The wings are readily detachable without the use of magnets, which is a real boon for storing them. I do magnetise the weapons though, to allow me to swap between Valkyries and Vendettas.

Mags are more an insurance for me. The right wing for some reason won't stay in the slot on the bird and keeps having to fall off everytime I moved it till I used rare earth mags and some erpoxy.
