Which army painter brush is smaller out of the insane detail and the psycho? I think the psycho is new :/
Plus is a glaze a sealer? I need something so my minis dont get all scratched up.

The psyco is the smaller brush, I use it to do eyes, as every other brush (including the insane detail) hits the outer eye...

Which should i get for detail such as collars and cuffs... Or holsters etc? Would psycho work for that or would it be too small?

It's doable with the psycho, but I prefer the next one up.

I use the Insane detail brush for highlights, small details like cuffs, medals and aquillas, and squad markings, the Psycho for eyes, writing and other random tiny details, the character for painting sections of colour, like armour, cloth etc. and washes, and the regiment for base coating. I love their brushes, they last, and are easy to control, and decently priced. Never tried their paints or stuff, because it's cheaper to go for other alternatives, but I would assume the glaze is a sealer.

Army builder primer sucks, their varnish is ace though, so I use gw black primer and army builder Matte varnish. I get my brushes from hobby lobby on the cheap with discount and they are higher quality than gw expensive brushes.

I don't think the citidel glazes are sealants.
