Can i select the GRENADIER alternative regiment organisation, without buying STORMTROOPERS from the restricted troops section.
If so my 5 doctrines would be:
Mechanised Grenadiers Carpace Armour Veterans Hardened fighters
P.S. Is this a good selection?

Yes. Grenadiers are essentially troops with the same characteristics, costs, choices, etc, of Stormtroopers.
Your choices are okay, but I really don't like compulsory choices. Carapace Armor and Mechanized MAKE you give them to all your troops.
With these choices, a basic Infantry platoon costs 460 pts!
The Guard is all about massed volleys of lasgun fire; therefore, any doctrine that limits the amount of Guardsmen, by its basic design or by points restrictions, on the field is a waste, in my honest opinion.
If you truly want to create an army composed of high-echelon Elites, remember that it will be at a severe disadvantage, since it's not taking advantage of the Guard's one great strength- its versatility.
Here's a retooled list with an explanation for each one.
Mechanised (You'll want to protect those expensive men behind walls of metal.) Carapace Armor (A save of 4+ isn't exactly a Marine's save, but it'll help) Sharpshooters (You won't be able to rely on the odds of fifty lasguns hitting their target, so the ability to re-roll a to-hit roll of 1 will be invaluable) Cybernetic Enhancements (A 6+ Invulnerable save will be great if you ever get hit with high-AP blast weaponry, and plus it'll give some good modeling opportunities- I suggest Necron legs >D) Close Order Drill (I always suggest this, simply because it's free. Any Guard infantry with their models in base-to-base contact are conferred a +1 bonus to Initiative and Leadership. I wouldn't suggest being in b2b formation all the time. Form up before you counter-charge any melee troops threatening your lines.)
With a list like this, each basic Infantry Platoon will cost 550 pts! That's without any weapon upgrades at all.
That's not to say a list like this can't work. You'll have to rely on vehicles a lot more and use your infantry as a way to mop up stragglers that your tanks leave behind. Plus, you'll only be able to play larger games to bring out the full potential of your army.
Still, it'd make a nice Adeptus Mechanicus Skritarii army. You could drop Close Order Drill and buy back Techpriests to keep your tanks alive longer. Plus, Gun Servitors really kick ass with their Plasma Cannons. And it presents unique modeling opportunities.
