What sort of things do i want to be bringing in a 2500 to 3000 point game against the nids?
As far as i know i am allowed to use my Baneblade and Hellhammer but if i could use one which would you advise?

Hellhammer all the way.
The two big threats from Nids are MCs and the Venomthrope. The venomthrope throws an area wide 5+ cover save to units within 6 inches. The Hellhammers ignore cover 7 inch blast will be enough to annihilate those guys one shot first turn basically neutering his army.
After that he will literally be easy pickings. None of his armor saves are very good and cover is his best defense. The HH cannon will eat all of his light MCs and units like warriors that are holding his synapse line together. Pretty much anything that is not in the air will die immediately. If you kill his synapse he will have a hard time stopping his units from destroying themselves or running. Combine that with punisher pask and a few HWTs in squads and you can make short work of the MCs as well. Give all your squads flamers helps. Basically templates of any kind are your friend. Unless he bring tryannofexs with rupture cannons and hive crones he will have a tough time with your vehicles at long range. A wyvern would also be a great choice. A quad gun is a good choice because it will get through his armor of his flyers and is easy to wound with tanks to the order.
If he is playing Skyblight formation, things are different. Skyblight is OP as hell. And you will need lots of flyers and anti-flyer weapons to deal with all the air units. Those eat up points. And he will have respawning gargoyle units. It is ridiculous.

At 3k points, you've got access to a TON of options. I would field at least 6 to 9 wyverns against Tyranids. Each wyvern fires 4 templates, can re roll the scatter distance, ignores cover, re rolls to wound, and has something like 60" range (have to double check that). If he's got a wall of gaunts or any other form of swarming 'nid creature, you'll tear them apart without any problem at all. Even though it's low strength, the ignore cover and shred makes it an absolute beast of a killing machine. YOu take 9 of them, you get 39 shredding, cover ignoring templates
Pask in a punisher with heavy bolters and 2 other punishers with heavy bolters in his unit will give you an amazing spearhead for your army. 87 shots per turn, all re rolling 1s to hit, and 1s to wound, and 20 of them are rending. That'll tear apart some of the tougher or higher armor save creatures that 'nids have to offer like Broodlords, tyrant guard and warriors.
The best way to deal with high armor save creatures with high toughness and lots of wounds is to blast it with bug bites, especially for those with inulvnerable saves.
And if it's apocalypse, you've got so many poitns to throw around, I would also recommend bringing a deathstrike missile. Tyranid board is most likely packed. It's a S10 AP1 apocalypse sized blast template that ignores cover as well, and is ordnance. It's cheaper than a baneblade, and you can use it to knock out a good section of his army

We are playing 2750 points. My list contains one LRBT,one punisher one demolsher and one vanq. Weisemann baneblade. one sqd of vets in taurox with flamers, one footslogging sqd with flamers. valk with multiple rocket pods, a vulture with twin linked punisher cannons. and a hellhammer for exactly 2750

Your infantry are going to be slain almost immediately, since you don't have that many. I recommend replacing the regular infantry with veterans with camo cloaks. I also recommend making your vanquisher a paskquisher, and stick him with the regular russ, give them both camo netting, or, take an Aegis defense line. Also, make the punisher a tank commander for the 4 BS, and pair it with the demolisher

Okay both squads are now vets. Playing using an armoires company from IA1 ver 2 So don't have access to tank commanders but have dedicated tank HQ and the vans has beast hunter shells which have the instant death rule

Beast Hunter Shells?? Tell me more Haha. A mate and I are playing a 1000pt warm up match tomorrow and then a 7500pt game on the weekend. Much excitement My biggest problems versing him are: 1)Being unable to kill his Venomthropes 2)Deep-Stirking Badness everywhere :/ (He has one Mawloc and one Trygon) 3)2xFlying Monstrous Creatures and the Sky Blight formation ((((( I field 3xVendettas, 1xVulture, 1xValk and 1xHydra yet he always still manages to win the air battle. Plus he has that much synapse everywhere and the way he positions his squads so that they cover an 18inch front means that he is always within range. urrrgghhhh....

I also might proxy in an Aegis (7xChimera dozer blades ) and man it with the Ratlings to help with the air battle. Any advice on tactics or on how to restructure my units? Cheers

That is going to be one hell of a fight about 4000 odd points I guess. I'm tempted by Eradicator's are they any good there str and ap just seem too low to me I'm jealous of you three super heavies. Beast hunter shells are in str 8 ap 2 small blast instant death. So igores all armor leaving just Fnp and invul which if they fail one they die no matter what wounds they have.
