In the Imperial Armour books, there's usually a regimental and company chart with what stuff's part of the regiment. Does anyone know how a standard Death Korps regiment is laid out? How many companies, sentinels, HW teams, etc?

Yeah, I've got the book, and the snazzy poster.
There are 2 types of Krieg Regiments. Field Artillery Companies and infantry Companies.
The Average Field artillery Company contains the following:
1 Company CO+Staff+Centaur transport
1 Trojan Communications Vehicle
1 Atlas Recovery Vehicle
4 Trojan Ammuninition Carriers and Trailers
(Most Companies contain 3 batteries, each contain the following)
Battery HQ JO+Staff+Centaur Transport
4 Heavy Mortar/Quad launcher+crew and Centaur artillery tractor/
The Average infantry Company contains the following:
1 Company HQ CO+Staff+Centaur Transport
2 Grenadier squads+Centaur Transports
10 Infantry Platoons (Each Platoon consists of 6 infantry squads and a Platoon command squad)
1 Heavy weapon Platoon (containing around 2 Fire support squads, 2 Mortar squads, 2 anti tank squads and 1 command squad.)
